CIMARRON — Wednesday (Dec. 9) a new dining establishment will open its doors in Cimarron in what was formerly the Double C Restaurant at the old Kit Carson Inn. The new restaurant, TJ’s Cafe, will have a full menu, specializing in barbecue items — brisket, ribs, chicken, sausage and the works.
In addition to the barbeque items, hamburgers, stuffed jalapeños, “real” steak fingers, a kid’s menu, among other items, will be served. TJ’s will also have a full, typical breakfast menu.
After a prerequisite 90 days, Judd hopes to add beer and wine to the menu.
“Everything is homemade and we will have “specials” nights,” said owner Tim Judd. “We’ll open on Wednesday (Dec. 9) and have our grand opening about a week after.”
Specials will include a Friday’s Catfish Dinner, Saturday’s Steak night from 5 to 7 p.m., and a Sunday special of Homemade Lasagna.
TJ’s will be open six days per week and will be closed on Tuesday. Hours of operation are 7 a.m. to 7 p.m.
TJ’s will also cater to large groups and will rent out a large dining room area for special events like parties, graduations, reunions and such.
Judd and his wife Shelley will have four full time staff members and another four part time employees.
